Ingredients:

Olive oil 3-4 tbs

 ½ Cup Red bell pepper diced

1 head of romaine lettuce, chopped

1 cup of cherry tomatoes, halved

1/2 red onion, diced

1 can of black beans, drained and rinsed

1/4 cup of fresh cilantro, chopped

1 lime, juiced

Cucumber cubes 1 Cup

Corn kernels boiled ½ Cup

1 jalapeno pepper, seeded and diced (optional)

Salt and pepper to taste

1/4 cup of crumbled cottage cheese

Instructions:

In a large bowl, combine the chopped lettuce, tomatoes, red onion, bell pepper, black beans, cilantro, and jalapeno pepper.

Whisk together the lime juice, salt, and pepper in a small bowl to make the dressing.

Pour the dressing over the salad and toss to combine.
